Endive with Roasted Garlic Dip
This appetizer features crisp endive leaves served with a creamy roasted garlic dip.
Ingredients - Serves 6
- Chives - 2 tablespoons, chopped
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Mayonnaise - 1/4 cup
- Sour cream - 1/2 cup
- Cream cheese - 8 oz
- Garlic - 1 bulb
- Endive - 3 heads
Let's Get Started
- Preheat the oven to 400°F.
- Cut the top off the garlic bulb to expose the cloves. Drizzle with olive oil and wrap in aluminum foil.
- Roast the garlic in the oven for 30 minutes, or until soft and golden.
- Remove the roasted garlic from the oven and let it cool.
- In a mixing bowl, combine the cream cheese, sour cream, mayonnaise, lemon juice, salt, and black pepper.
- Squeeze the roasted garlic cloves out of their skins and add them to the bowl.
- Mix well until all the ingredients are combined and the dip is smooth.
- Separate the endive leaves and arrange them on a serving platter.
- Serve the endive leaves with the roasted garlic dip on the side.
- Garnish with chopped chives before serving.
