Empadão Goiano
Empadão Goiano is a traditional Brazilian dish from the state of Goiás. It's a savory pie filled with various ingredients, including chicken, sausage, olives, corn, peas, and heart of palm.
Ingredients - Serves 8
- Salt and pepper - To taste
- Tomato sauce - 1 cup
- Heart of palm - 1 cup, sliced
- Peas - 1/2 cup, cooked
- Corn - 1/2 cup, cooked
- Olives - 1/2 cup, sliced
- Sausage - 1 cup, cooked and sliced
- Chicken breast - 2 cups, cooked and shredded
- Eggs - 2
- Butter - 1 cup
- All-purpose flour - 4 cups
Let's Get Started
- In a large bowl, combine the flour, butter, and eggs. Knead until a dough forms. Let it rest for 30 minutes.
- In a large pan, combine the chicken, sausage, olives, corn, peas, heart of palm, and tomato sauce. Season with salt and pepper. Cook for 10 minutes, or until heated through.
- Preheat the oven to 350°F.
- Roll out half of the dough and use it to line a pie dish. Fill with the chicken mixture.
- Roll out the remaining dough and use it to cover the pie. Seal the edges and make a few slits in the top to allow steam to escape.
- Bake for 40 minutes, or until the crust is golden brown.
