- Thyme - 1 teaspoon, fresh
- Honey - 1 tablespoon
- Red wine - 1/2 cup
- Mixed berries - 2 cups, fresh or frozen
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Elk tenderloin - 1.5 pounds

- Preheat the oven to 400°F.
- Season the elk tenderloin with salt and pepper.
- Heat the olive oil and butter in a large oven-safe skillet over medium-high heat.
- Add the elk tenderloin and sear on all sides until browned, about 5 minutes.
