Elk Tenderloin with Berry Sauce

  1. Preheat the oven to 400°F.
  2. Season the elk tenderloin with salt and pepper.
  3. Heat the olive oil and butter in a large oven-safe skillet over medium-high heat.
  4. Add the elk tenderloin and sear on all sides until browned, about 5 minutes.
  5. Transfer the skillet to the oven and roast for 10-15 minutes, or until the elk reaches your desired level of doneness.
  6. While the elk is roasting, make the berry sauce. In a saucepan, combine the garlic, mixed berries, red wine, honey, and thyme.
  7. Bring the sauce to a boil, then reduce the heat and simmer until the sauce is reduced by half, about 10 minutes.
  8. Remove the elk from the oven and let it rest for a few minutes before slicing.
