Eggplant Caviar
This delicious eggplant caviar is a flavorful and healthy appetizer made with roasted eggplant, tomatoes, garlic, and herbs.
Ingredients - Serves 6
- Salt and pepper - To taste
- Fresh basil - 1 tablespoon, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Tomatoes - 2 medium, diced
- Eggplant - 2 medium
Let's Get Started
- Preheat the oven to 400°F.
- Prick the eggplants with a fork and place them on a baking sheet. Roast in the oven for 30-40 minutes, or until the skin is charred and the flesh is soft.
- Remove the eggplants from the oven and let them cool. Once cooled, peel off the skin and discard.
- In a bowl, mash the roasted eggplant flesh with a fork or blend it in a food processor until smooth.
- Add the diced tomatoes, minced garlic, olive oil, lemon juice, chopped parsley, chopped basil, salt, and pepper to the mashed eggplant. Mix well to combine.
- Taste and adjust the seasoning if needed.
- Refrigerate the eggplant caviar for at least 1 hour before serving to allow the flavors to meld together.
- Serve chilled with toasted bread or crackers.
