Edamame Succotash
A healthy and colorful side dish packed with protein and fiber. This edamame succotash is a modern twist on a classic Southern dish.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh basil - 1/4 cup, chopped
- Cherry tomatoes - 1 cup, halved
- Frozen corn - 1 cup, thawed
- Frozen edamame - 2 cups, thawed
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and bell pepper and cook until softened, about 5 minutes.
- Add the garlic and cook for another minute, until fragrant.
- Add the edamame and corn to the skillet and cook until heated through, about 5 minutes.
- Stir in the cherry tomatoes and cook for another 2 minutes, until the tomatoes start to soften.
- Remove from heat and stir in the chopped basil. Season with salt and pepper to taste.
- Serve warm as a side dish.
