Edamame Soba Soup
A healthy and hearty soup made with soba noodles, edamame, and a flavorful broth.
Ingredients - Serves 4
- Sesame oil - 1 tablespoon
- Green onions - 2, sliced
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Vegetable broth - 4 cups
- Edamame - 1 cup, shelled
- Soba noodles - 200 grams
Let's Get Started
- Cook the soba noodles according to the package instructions. Drain and set aside.
- In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger and cook until fragrant.
- Add the vegetable broth and soy sauce to the pot and bring to a boil.
- Add the edamame to the pot and cook for 5 minutes.
- Add the cooked soba noodles to the pot and stir to combine.
- Serve the soup hot, garnished with the sliced green onions.
