Edamame Rice Bowl
A healthy and delicious bowl filled with brown rice, edamame, avocado and cucumber, topped with a simple vinaigrette.
Ingredients - Serves 2
- Sesame oil - 1 teaspoon
- Honey - 1 teaspoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Cucumber - 1, sliced
- Avocado - 1, sliced
- Edamame - 1 cup, shelled and cooked
- Water - 2 cups
- Brown rice - 1 cup
Let's Get Started
- Rinse the brown rice under cold water until the water runs clear. Combine the rice and water in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 45 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the vinaigrette by whisking together the soy sauce, rice vinegar, honey, and sesame oil in a small bowl.
- To assemble the bowls, divide the cooked rice between two bowls. Top each bowl with equal amounts of edamame, avocado, and cucumber.
- Drizzle the vinaigrette over the bowls and sprinkle with sesame seeds before serving.
