Let's Get Started

  1. Rinse the brown rice under cold water until the water runs clear. Combine the rice and water in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 45 minutes, or until the rice is tender and the water is absorbed.
  2. While the rice is cooking, prepare the vinaigrette by whisking together the soy sauce, rice vinegar, honey, and sesame oil in a small bowl.
  3. To assemble the bowls, divide the cooked rice between two bowls. Top each bowl with equal amounts of edamame, avocado, and cucumber.
  4. Drizzle the vinaigrette over the bowls and sprinkle with sesame seeds before serving.
