Edamame and Brown Rice Bowl
A healthy and delicious bowl filled with brown rice, edamame, and a variety of fresh vegetables. Perfect for a quick lunch or dinner.
Ingredients - Serves 2
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Avocado - 1, sliced
- Cucumber - 1/2, sliced
- Carrot - 1, grated
- Edamame - 1 cup, shelled and cooked
- Water - 2 cups
- Brown rice - 1 cup
Let's Get Started
- Rinse the brown rice under cold water until the water runs clear.
- In a medium pot, bring the water to a boil. Add the rice, reduce the heat to low, cover, and cook for 45 minutes.
- While the rice is cooking, prepare the edamame according to the package instructions.
- In a large bowl, combine the cooked rice, edamame, grated carrot, sliced cucumber, and sliced avocado.
- In a small bowl, whisk together the soy sauce and sesame oil. Drizzle over the rice bowl and toss to combine.
- Sprinkle with sesame seeds before serving.
