- Sugar - To taste
- Water - 4 cups
- Mung beans - 1 cup
Let's Get Started
- Rinse the mung beans under cold water until the water runs clear.
- In a large pot, add the mung beans and water.
- Bring the water to a boil over high heat, then reduce the heat to low and let the beans simmer for about 2 hours, or until they are soft and broken down.
- Strain the mixture through a fine mesh sieve into a large bowl, pressing on the beans to extract as much liquid as possible.
- Discard the solids and let the liquid cool to room temperature.
- Sweeten the mung bean milk with sugar to taste, then refrigerate until chilled.
- Serve the mung bean milk cold.
