Cuscuz Paulista

Ingredients - Serves 6
- Salt and pepper - To taste
- Eggs - 2, hard-boiled and sliced
- Canned sardines - 1 can
- Peas - 1/2 cup
- Carrot - 1, chopped
- Green bell pepper - 1, chopped
- Tomatoes - 2, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Water - 4 cups
- Cornmeal - 2 cups
Let's Get Started
- In a large bowl, mix the cornmeal with the water and let it soak for 20 minutes.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until they are soft.
- Add the tomatoes, bell pepper, carrot, peas, and sardines to the pot. Cook for 10 minutes, stirring occasionally.
- Add the soaked cornmeal to the pot and stir well. Cook for another 10 minutes, or until the mixture thickens.
- Season with salt and pepper to taste.
- Pour the mixture into a mold, pressing it down firmly. Arrange the sliced eggs on top.
- Cover the mold with a lid or aluminum foil and steam over low heat for 30 minutes.
- Remove from heat and let it cool before unmolding. Serve the Cuscuz Paulista warm or at room temperature.
