Let's Get Started

  1. In a medium-sized pot, melt the butter over medium heat.
  2. Add the chopped onion and diced potato to the pot. Cook until the onion is translucent and the potato is slightly softened.
  3. Add the smoked haddock to the pot and pour in the milk. Simmer for about 5 minutes, or until the haddock is cooked through and the potato is tender.
  4. Remove the pot from heat and carefully transfer the mixture to a blender. Blend until smooth.
  5. Pour the blended mixture back into the pot and add the strong brewed coffee. Stir well to combine.
  6. Place the pot back on the stove and heat the mixture over low heat until warmed through.
  7. Season with salt and pepper to taste.
  8. Serve the Cullen Skink Coffee in a mug, garnished with fresh parsley.
