Cullen Skink Coffee
A unique and savory coffee recipe inspired by the traditional Scottish dish, Cullen Skink.
Ingredients - Serves 1
- Salt and pepper - To taste
- Fresh parsley - 1 tablespoon, chopped
- Milk - 1/2 cup
- Butter - 1 tablespoon
- Onion - 1 small, finely chopped
- Potato - 1 medium, diced
- Smoked haddock - 100g
- Strong brewed coffee - 1 cup
Let's Get Started
- In a medium-sized pot, melt the butter over medium heat.
- Add the chopped onion and diced potato to the pot. Cook until the onion is translucent and the potato is slightly softened.
- Add the smoked haddock to the pot and pour in the milk. Simmer for about 5 minutes, or until the haddock is cooked through and the potato is tender.
- Remove the pot from heat and carefully transfer the mixture to a blender. Blend until smooth.
- Pour the blended mixture back into the pot and add the strong brewed coffee. Stir well to combine.
- Place the pot back on the stove and heat the mixture over low heat until warmed through.
- Season with salt and pepper to taste.
- Serve the Cullen Skink Coffee in a mug, garnished with fresh parsley.
