Crumpets
Crumpets are a traditional British tea-time treat. They are soft, fluffy, and perfect for spreading with butter and jam.
Ingredients - Serves 6
- Vegetable oil - For greasing
- Butter - 2 tablespoons, melted
- Active dry yeast - 2 teaspoons
- Water - 1/2 cup
- Milk - 1 1/2 cups
- Sugar - 1 tablespoon
- Salt - 1/2 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 2 cups
Let's Get Started
- In a large mixing bowl, combine the flour, baking powder, salt, and sugar.
- In a small saucepan, heat the milk and water until warm but not boiling.
- Sprinkle the yeast over the warm milk mixture and let it sit for 5 minutes, or until foamy.
- Pour the yeast mixture into the dry ingredients and stir until well combined.
- Cover the bowl with a clean kitchen towel and let the batter rise in a warm place for 1 hour, or until doubled in size.
- Heat a griddle or non-stick skillet over medium heat and lightly grease with vegetable oil.
- Using a ladle or large spoon, drop spoonfuls of the batter onto the hot griddle, forming round crumpets.
- Cook for 3-4 minutes, or until bubbles form on the surface and the edges start to set.
- Flip the crumpets and cook for an additional 2-3 minutes, or until golden brown.
- Remove from the griddle and repeat with the remaining batter.
- Serve the crumpets warm with butter and jam.
