  1. In a large mixing bowl, combine the flour, baking powder, salt, and sugar.
  2. In a small saucepan, heat the milk and water until warm but not boiling.
  3. Sprinkle the yeast over the warm milk mixture and let it sit for 5 minutes, or until foamy.
  4. Pour the yeast mixture into the dry ingredients and stir until well combined.
  5. Cover the bowl with a clean kitchen towel and let the batter rise in a warm place for 1 hour, or until doubled in size.
  6. Heat a griddle or non-stick skillet over medium heat and lightly grease with vegetable oil.
  7. Using a ladle or large spoon, drop spoonfuls of the batter onto the hot griddle, forming round crumpets.
  8. Cook for 3-4 minutes, or until bubbles form on the surface and the edges start to set.
  9. Flip the crumpets and cook for an additional 2-3 minutes, or until golden brown.
  10. Remove from the griddle and repeat with the remaining batter.
  11. Serve the crumpets warm with butter and jam.
