  1. In a saucepan, heat the milk until hot but not boiling.
  2. In a separate pan, melt the butter over medium heat. Add the flour and cook for 1-2 minutes, stirring constantly.
  3. Gradually add the hot milk to the flour mixture, stirring continuously until you have a smooth, thick sauce.
  4. Add the finely chopped ham to the sauce and mix well. Season with salt to taste.
  5. Transfer the mixture to a shallow dish and let it cool completely.
  6. Once the mixture is cooled, shape it into small croquettes using your hands.
  7. Dip each croquette into beaten egg, then coat it with breadcrumbs.
  8. Heat vegetable oil in a deep pan or fryer to 180°C (350°F).
  9. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per batch.
  10. Remove the croquettes from the oil and drain them on paper towels to remove excess oil.
  11. Serve the croquetas de Jamón hot as an appetizer or snack.
