Croquetas
Croquetas are a popular Spanish appetizer made with a creamy béchamel sauce and various fillings.
Ingredients - Serves 6
- Vegetable oil - For frying
- Egg - 2, beaten
- Breadcrumbs - 1 cup
- Salt and pepper - To taste
- Cheese - 1/2 cup, grated
- Ham - 1/2 cup, finely chopped
- Chicken or vegetable broth - 1 cup
- Milk - 1 cup
- All-purpose flour - 1/4 cup
- Butter - 3 tablespoons
Let's Get Started
- In a saucepan, melt the butter over medium heat.
- Add the flour and cook for 1-2 minutes, stirring constantly.
- Gradually whisk in the milk and broth until smooth.
- Cook the mixture until thickened, about 5 minutes, stirring constantly.
- Remove from heat and stir in the chopped ham, grated cheese, salt, and pepper.
- Transfer the mixture to a shallow dish and refrigerate for at least 2 hours, or until firm.
- Shape the chilled mixture into small cylinders or balls.
- Dip each croqueta into the beaten egg, then roll in breadcrumbs to coat.
- Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
- Fry the croquetas in batches until golden brown, about 3-4 minutes per batch.
- Remove from the oil and drain on paper towels.
- Serve hot as an appetizer or snack.
