Crispy Chicken Ramen
This delicious crispy chicken ramen is made with tender chicken, crispy vegetables, and flavorful broth.
Ingredients - Serves 2
- Salt and pepper - To taste
- Chili flakes - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Eggs - 2, soft-boiled
- Chicken broth - 4 cups
- Soy sauce - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green onions - 4, chopped
- Bell peppers - 1, thinly sliced
- Carrots - 2, julienned
- Vegetable oil - 2 tablespoons
- Ramen noodles - 2 packs
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- Cook the ramen noodles according to package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Cook the chicken breasts for 6-8 minutes on each side, or until cooked through and crispy. Remove from the skillet and let them rest for a few minutes. Slice the chicken into thin strips.
- In the same skillet, heat another tablespoon of vegetable oil. Add the carrots, bell peppers, green onions, garlic, and ginger. Cook for 5 minutes, or until the vegetables are tender-crisp.
- Add the soy sauce and chicken broth to the skillet. Bring to a boil, then reduce the heat and simmer for 10 minutes to allow the flavors to meld together.
- Divide the cooked ramen noodles between two bowls. Ladle the hot broth and vegetables over the noodles.
- Top each bowl with sliced crispy chicken, soft-boiled eggs, sesame seeds, and chili flakes.
- Serve immediately and enjoy!
