  1. Cook the ramen noodles according to package instructions. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Cook the chicken breasts for 6-8 minutes on each side, or until cooked through and crispy. Remove from the skillet and let them rest for a few minutes. Slice the chicken into thin strips.
  3. In the same skillet, heat another tablespoon of vegetable oil. Add the carrots, bell peppers, green onions, garlic, and ginger. Cook for 5 minutes, or until the vegetables are tender-crisp.
  4. Add the soy sauce and chicken broth to the skillet. Bring to a boil, then reduce the heat and simmer for 10 minutes to allow the flavors to meld together.
  5. Divide the cooked ramen noodles between two bowls. Ladle the hot broth and vegetables over the noodles.
  6. Top each bowl with sliced crispy chicken, soft-boiled eggs, sesame seeds, and chili flakes.
