- Tomatoes - 2 cups, chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Couscous - 2 cups
Let's Get Started
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft.
- Add the tomatoes and cook until they start to break down.
- Add the fish stock and bring to a boil.
- Add the seafood, cover the pot, and cook until the seafood is cooked through.
- In a separate pot, prepare the couscous according to the package instructions.
- Once the couscous is cooked, fluff it with a fork and add it to the pot with the seafood.
