Cotton Candy Macarons
These delightful cotton candy macarons are a sweet treat that's perfect for any occasion. They're light, fluffy, and filled with a delicious cotton candy buttercream.
Ingredients - Serves 24
- Cotton candy flavoring - 1/2 teaspoon
- Powdered sugar - 1 1/2 cups
- Butter - 1/2 cup, softened
- Food coloring - 2-3 drops, optional
- Cotton candy flavoring - 1/2 teaspoon
- Granulated sugar - 1/4 cup
- Egg whites - 3 large
- Powdered sugar - 1 cup
- Almond flour - 1 3/4 cups
Let's Get Started
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour and powdered sugar and process until fine.
- In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar, cotton candy flavoring, and food coloring (if using), and continue beating until stiff peaks form.
- Fold the almond flour mixture into the egg whites until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip and pipe 1-inch circles onto the prepared baking sheets.
- Let the macarons sit at room temperature for 30 minutes to develop a skin.
- Bake for 20 minutes, or until the macarons are set and can be easily lifted off the parchment paper.
- While the macarons are cooling, make the buttercream: In a large bowl, beat the butter until creamy. Gradually add the powdered sugar and cotton candy flavoring and beat until light and fluffy.
- Once the macarons are completely cooled, pipe or spread the buttercream onto one macaron shell and sandwich with another shell. Repeat with the remaining macarons and buttercream.
- Store the macarons in an airtight container in the refrigerator for up to 1 week.
