Corn and Broccoli Rice Casserole
This delicious corn and broccoli rice casserole is a comforting and flavorful side dish that pairs well with any main course.
Ingredients - Serves 6
- Butter - 2 tablespoons, melted
- Breadcrumbs - 1/2 cup
- Salt and pepper - To taste
- Garlic powder - 1 teaspoon
- Onion - 1/2, finely chopped
- Mayonnaise - 1/4 cup
- Sour cream - 1/2 cup
- Cheddar cheese - 1 cup, shredded
- Frozen corn - 1 cup
- Broccoli florets - 2 cups
- White rice - 1 cup
Let's Get Started
- Preheat the oven to 375°F (190°C).
- Cook the white rice according to the package instructions. Set aside.
- Steam the broccoli florets until tender. Drain and set aside.
- In a large mixing bowl, combine the cooked rice, steamed broccoli, frozen corn, shredded cheddar cheese, sour cream, mayonnaise, chopped onion, garlic powder, salt, and pepper. Mix well.
