  1. In a large pot, melt the butter over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken and set aside.
  2. In the same pot, add the onions and garlic and cook until soft.
  3. Add the flour and stir until the onions and garlic are coated. Slowly add the wine, stirring constantly until the mixture is smooth.
  4. Add the chicken stock, thyme, bay leaf, salt, and pepper. Bring to a boil.
  5. Return the chicken to the pot, reduce the heat, and simmer for 1 hour.
  6. Add the mushrooms and continue to simmer for another 30 minutes, until the chicken is cooked through and the sauce has thickened.
  7. Serve the Coq au Vin Blanc hot, with crusty bread or mashed potatoes.
