Coq Au Vin Blanc

Ingredients - Serves 4
- Salt and pepper - To taste
- Bay leaf - 1
- Thyme - 1 teaspoon
- Chicken stock - 500 ml
- Flour - 2 tablespoons
- Butter - 50 grams
- Mushrooms - 200 grams
- Onions - 2, chopped
- Garlic cloves - 3, minced
- White wine - 750 ml
- Chicken pieces - 1 kg
Let's Get Started
- In a large pot, melt the butter over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken and set aside.
- In the same pot, add the onions and garlic and cook until soft.
- Add the flour and stir until the onions and garlic are coated. Slowly add the wine, stirring constantly until the mixture is smooth.
- Add the chicken stock, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Return the chicken to the pot, reduce the heat, and simmer for 1 hour.
- Add the mushrooms and continue to simmer for another 30 minutes, until the chicken is cooked through and the sauce has thickened.
- Serve the Coq au Vin Blanc hot, with crusty bread or mashed potatoes.
