Cong You Bing
Cong You Bing is a traditional Chinese pancake, also known as scallion pancake, made from dough instead of batter. It is a savory, non-leavened flatbread folded with oil and minced scallions.
Ingredients - Serves 4
- Vegetable oil - For frying
- Sesame oil - 1/4 cup
- Salt - 1 teaspoon
- Scallions - 1 cup, finely chopped
- Hot water - 3/4 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, mix the flour and hot water until a dough forms. Knead the dough on a floured surface until smooth, about 10 minutes. Cover with a damp cloth and let rest for 30 minutes.
- Divide the dough into 4 equal parts. Roll out one part into a circle. Brush with sesame oil, sprinkle with 1/4 of the scallions and salt.
- Roll up the dough circle into a log, then coil it up like a snail. Roll out the coil into a circle again.
- Repeat with the remaining dough and scallions.
- Heat the vegetable oil in a pan over medium heat. Fry each pancake until golden brown on both sides, about 2-3 minutes per side.
- Cut the pancakes into wedges and serve hot.
