Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, mix the flour and hot water until a dough forms. Knead the dough on a floured surface until smooth, about 10 minutes. Cover with a damp cloth and let rest for 30 minutes.
  2. Divide the dough into 4 equal parts. Roll out one part into a circle. Brush with sesame oil, sprinkle with 1/4 of the scallions and salt.
  3. Roll up the dough circle into a log, then coil it up like a snail. Roll out the coil into a circle again.
  4. Repeat with the remaining dough and scallions.
  5. Heat the vegetable oil in a pan over medium heat. Fry each pancake until golden brown on both sides, about 2-3 minutes per side.
  6. Cut the pancakes into wedges and serve hot.
