Com Xao
Com Xao is a delicious Vietnamese stir-fried rice dish made with jasmine rice, vegetables, and your choice of protein.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 4, chopped
- Vegetable oil - 2 tablespoons
- Sesame oil - 1 tablespoon
- Oyster sauce - 2 tablespoons
- Fish sauce - 2 tablespoons
- Soy sauce - 3 tablespoons
- Garlic - 3 cloves, minced
- Snow peas - 1 cup
- Bell peppers - 2, thinly sliced
- Carrots - 2, julienned
- Shrimp - 1/2 pound, peeled and deveined
- Chicken breast - 2, boneless and skinless, thinly sliced
- Jasmine rice - 2 cups, cooked and cooled
Let's Get Started
- Heat the vegetable oil in a wok or large skillet over high heat.
- Add the chicken and shrimp, and cook until they are cooked through and slightly browned. Remove from the wok and set aside.
- In the same wok, add the garlic and cook until fragrant.
- Add the carrots, bell peppers, and snow peas. Stir-fry for 2-3 minutes, until the vegetables are crisp-tender.
- Push the vegetables to one side of the wok and add the cooked rice to the other side.
- Pour the soy sauce, fish sauce, and oyster sauce over the rice. Stir-fry for 2-3 minutes, until the rice is heated through and well-coated with the sauces.
- Add the cooked chicken, shrimp, and green onions to the wok. Stir-fry for another 2 minutes to combine all the ingredients.
- Season with salt and pepper to taste.
- Drizzle with sesame oil and give it a final stir.
- Serve hot and enjoy!
