Classic Beef Stew
A hearty, warming dish of beef stew, perfect for cold winter nights.
Ingredients - Serves 6
- Thyme - 1 teaspoon
- Bay leaf - 1
- Worcestershire sauce - 1 tablespoon
- Tomato paste - 2 tablespoons
- Beef broth - 4 cups
- Potatoes - 3 large, peeled and chopped
- Carrots - 3, peeled and chopped
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Stewing beef - 1.5 pounds
Let's Get Started
- Season the beef with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the carrots and potatoes and cook for a few more minutes.
- Return the beef to the pot. Add the beef broth, tomato paste, Worcestershire sauce, bay leaf, and thyme.
- Bring to a boil, then reduce the heat and simmer for 2 hours, or until the beef is tender.
- Remove the bay leaf before serving.
