Ciuppin
Ciuppin is a traditional Italian fish soup, originally from Liguria. It's a hearty and flavorful dish, perfect for seafood lovers.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - A handful, chopped
- Fish stock - 1 liter
- White wine - 1 cup
- Mixed fish - 1 kg, cleaned and cut into pieces
- Tomatoes - 2, chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the tomatoes and cook for another 5 minutes.
- Add the fish and cook until it starts to change color, about 5 minutes.
- Pour in the wine and let it evaporate.
- Add the fish stock, parsley, salt, and pepper. Bring to a boil, then reduce the heat and simmer for about 45 minutes.
- Serve the soup hot, with crusty bread on the side.
