  1. Preheat the oven to 325°F.
  2. Season the pork belly with salt and pepper.
  3. Heat the olive oil in a large oven-safe pot over medium-high heat. Add the pork belly and sear on all sides until browned. Remove from the pot and set aside.
  4. In the same pot, add the onion and garlic and cook until softened.
  5. Add the apple cider, chicken stock, bay leaves, and thyme. Bring to a simmer.
  6. Return the pork belly to the pot, cover, and transfer to the oven.
  7. Braise for 3 hours, or until the pork is tender.
  8. Remove from the oven and let rest for a few minutes before slicing and serving.
