  1. Season the pork shoulder with salt and pepper.
  2. Heat the olive oil in a large pot over medium-high heat. Add the pork and sear on all sides until browned.
  3. Remove the pork from the pot and set aside.
  4. In the same pot, add the onion and garlic and cook until softened.
  5. Add the apple cider, chicken broth, bay leaves, and thyme. Bring to a simmer.
  6. Return the pork to the pot. Cover and reduce the heat to low.
  7. Simmer for about 2 hours, or until the pork is tender and can be easily pulled apart with a fork.
  8. Remove the bay leaves and thyme. Shred the pork and serve with the braising liquid.
