Chili Crab
Chili Crab is a seafood dish popular in Singapore. It is made with mud crabs that are stir-fried in a semi-thick, sweet and savory tomato and chili based sauce.
Ingredients - Serves 4
- Salt - To taste
- Spring onions - 2, chopped
- Eggs - 2, beaten
- Sugar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Tomato ketchup - 1/2 cup
- Fresh red chilies - 6, deseeded and chopped
- Garlic - 5 cloves, minced
- Vegetable oil - 2 tablespoons
- Mud crabs - 2 large, cleaned and cut into pieces
Let's Get Started
- Heat the oil in a large wok or frying pan over medium heat.
- Add the garlic and chilies and stir-fry for 2 minutes.
- Add the crabs and stir-fry for another 5 minutes, until they start to turn red.
- Add the ketchup, soy sauce, sugar, and salt. Stir well to coat the crabs in the sauce.
- Cover the wok and simmer for 10 minutes, until the crabs are cooked through.
- Slowly pour in the beaten eggs, stirring constantly, until the eggs are cooked and the sauce is thickened.
- Sprinkle with the chopped spring onions and serve.
