Let's Get Started

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the sesame oil over medium heat. Add the chicken and cook until browned and cooked through, about 5 minutes. Remove the chicken from the pot and set aside.
  3. In the same pot, add the garlic, ginger, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Add the chicken broth, soy sauce, and mirin to the pot. Bring to a boil.
  5. Reduce the heat to low and add the sliced mushrooms, baby bok choy, and green onions. Simmer for 5 minutes until the vegetables are tender.
  6. Return the cooked chicken to the pot and season with salt and pepper to taste.
  7. Divide the cooked udon noodles between two bowls. Ladle the chicken and vegetable broth over the noodles.
  8. Garnish with additional sliced green onions, if desired.
  9. Serve hot and enjoy!
