Chicken Udon
This delicious chicken udon recipe features tender chicken, thick udon noodles, and a flavorful broth.
Ingredients - Serves 2
- Salt and pepper - To taste
- Red pepper flakes - 1/2 teaspoon
- Sliced mushrooms - 1 cup
- Baby bok choy - 2, halved
- Green onions - 2, sliced
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Mirin - 2 tablespoons
- Soy sauce - 2 tablespoons
- Chicken broth - 4 cups
- Udon noodles - 8 oz
- Boneless, skinless chicken breasts - 2, thinly sliced
Let's Get Started
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a large pot, heat the sesame oil over medium heat. Add the chicken and cook until browned and cooked through, about 5 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the garlic, ginger, and red pepper flakes. Cook for 1 minute until fragrant.
- Add the chicken broth, soy sauce, and mirin to the pot. Bring to a boil.
- Reduce the heat to low and add the sliced mushrooms, baby bok choy, and green onions. Simmer for 5 minutes until the vegetables are tender.
- Return the cooked chicken to the pot and season with salt and pepper to taste.
- Divide the cooked udon noodles between two bowls. Ladle the chicken and vegetable broth over the noodles.
- Garnish with additional sliced green onions, if desired.
