Let's Get Started

  1. In a large pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
  2. In the same pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and cook for 1 minute until fragrant.
  3. Add the chicken broth, soy sauce, carrots, and green onions to the pot. Bring to a simmer.
  4. Season the chicken breasts with salt and pepper, then add them to the pot. Cook for 15-20 minutes until the chicken is cooked through.
  5. Remove the chicken from the pot and shred it using two forks. Set aside.
  6. In a separate pot, bring water to a boil and cook the eggs for 6-7 minutes for soft-boiled or 9-10 minutes for hard-boiled. Peel and set aside.
  7. Divide the cooked ramen noodles between two bowls. Top with the shredded chicken, sliced boiled eggs, and the hot broth with vegetables.
  8. Garnish with additional chopped green onions and serve hot.
