Chicken Ramen
This flavorful chicken ramen is made with tender chicken, fresh vegetables, and a savory broth.
Ingredients - Serves 2
- Salt and pepper - To taste
- Sesame oil - 1 tablespoon
- Eggs - 2
- Green onions - 4, chopped
- Carrots - 2, thinly sliced
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Chicken broth - 4 cups
- Ramen noodles - 2 packs
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- In a large pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
- In the same pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and cook for 1 minute until fragrant.
- Add the chicken broth, soy sauce, carrots, and green onions to the pot. Bring to a simmer.
- Season the chicken breasts with salt and pepper, then add them to the pot. Cook for 15-20 minutes until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Set aside.
- In a separate pot, bring water to a boil and cook the eggs for 6-7 minutes for soft-boiled or 9-10 minutes for hard-boiled. Peel and set aside.
- Divide the cooked ramen noodles between two bowls. Top with the shredded chicken, sliced boiled eggs, and the hot broth with vegetables.
- Garnish with additional chopped green onions and serve hot.
