Chicken Parmesan Soup

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken pieces and cook until browned, about 5 minutes. Remove from the pot and set aside.
  3. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  4. Add the tomato sauce, chicken broth, dried basil, dried oregano, salt, and pepper. Bring to a boil.
  5. Reduce the heat and simmer for 15 minutes.
  6. Add the cooked pasta and browned chicken back to the pot. Stir to combine.
  7. Simmer for an additional 5 minutes to heat through.
  8. Ladle the soup into bowls and top with shredded mozzarella and grated Parmesan cheese.
  9. Garnish with fresh basil leaves before serving.
