Chicken Parmesan Soup
A delicious twist on the classic Italian dish, this Chicken Parmesan Soup is hearty, flavorful, and comforting.
Ingredients - Serves 6
- Fresh basil leaves - For garnish
- Grated parmesan cheese - 1/2 cup
- Shredded mozzarella cheese - 1 cup
- Cooked pasta - 1 cup
- Salt and pepper - To taste
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Chicken broth - 4 cups
- Tomato sauce - 1 can (14 oz)
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Chicken breasts - 2, boneless and skinless, cut into small pieces
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the chicken pieces and cook until browned, about 5 minutes. Remove from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the tomato sauce, chicken broth, dried basil, dried oregano, salt, and pepper. Bring to a boil.
- Reduce the heat and simmer for 15 minutes.
- Add the cooked pasta and browned chicken back to the pot. Stir to combine.
- Simmer for an additional 5 minutes to heat through.
- Ladle the soup into bowls and top with shredded mozzarella and grated Parmesan cheese.
- Garnish with fresh basil leaves before serving.
