Cauliflower Rice Stir Fry
This healthy and flavorful cauliflower rice stir fry is packed with colorful vegetables and delicious Asian-inspired flavors.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Sesame oil - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Snap peas - 1 cup
- Broccoli florets - 1 cup
- Bell peppers - 2, thinly sliced
- Carrots - 2, thinly sliced
- Cauliflower - 1 head, grated into rice-like texture
Let's Get Started
- In a large skillet or wok, heat the sesame oil over medium heat.
- Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
- Add the sliced carrots, bell peppers, broccoli florets, and snap peas to the skillet. Stir fry for 3-4 minutes until the vegetables are slightly tender.
- Push the vegetables to one side of the skillet and add the cauliflower rice to the other side. Cook for 2-3 minutes, stirring occasionally, until the cauliflower rice is heated through.
- Combine the vegetables and cauliflower rice in the skillet. Add soy sauce, salt, and pepper. Stir well to combine and cook for an additional 2 minutes.
- Remove from heat and garnish with sesame seeds and chopped green onions.
