Cauliflower Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. In a large skillet or wok, heat the sesame oil over medium heat.
  2. Add the diced onion and minced garlic, and cook until fragrant and slightly softened.
  3. Add the diced carrots, peas, and bell peppers to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  4. Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  5. Combine the scrambled eggs with the vegetables in the skillet.
  6. Add the grated cauliflower rice to the skillet and stir to combine with the vegetables and eggs.
  7. Drizzle the soy sauce over the mixture and stir well to evenly coat everything.
  8. Cook for an additional 3-4 minutes, stirring occasionally, until the cauliflower rice is tender.
  9. Season with salt and pepper to taste.
  10. Garnish with chopped green onions before serving.
