Cauliflower Fried Rice
A healthy and delicious alternative to traditional fried rice, made with cauliflower rice and loaded with vegetables.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 2, chopped
- Eggs - 2, beaten
- Sesame oil - 1 tablespoon
- Soy sauce - 3 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Bell peppers - 1, diced
- Peas - 1 cup, frozen
- Carrots - 2, diced
- Cauliflower - 1 head, grated into rice-like texture
Let's Get Started
- In a large skillet or wok, heat the sesame oil over medium heat.
- Add the diced onion and minced garlic, and cook until fragrant and slightly softened.
- Add the diced carrots, peas, and bell peppers to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
- Combine the scrambled eggs with the vegetables in the skillet.
- Add the grated cauliflower rice to the skillet and stir to combine with the vegetables and eggs.
- Drizzle the soy sauce over the mixture and stir well to evenly coat everything.
- Cook for an additional 3-4 minutes, stirring occasionally, until the cauliflower rice is tender.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
