Cassoeula
Cassoeula is a traditional Italian dish, a stew made with pork and cabbage. It's a hearty and comforting dish perfect for cold winter days.
Ingredients - Serves 6
- Salt and pepper - To taste
- White wine - 1 glass
- Butter - 50 grams
- Celery - 1 stalk, chopped
- Carrot - 1, chopped
- Onion - 1, chopped
- Savoy cabbage - 1 head
- Sausages - 4
- Pork rind - 200 grams
- Pork ribs - 1 kg
Let's Get Started
- In a large pot, melt the butter and add the chopped onion, carrot, and celery. Cook until the vegetables are soft.
- Add the pork ribs, pork rind, and sausages to the pot. Cook until the meat is browned on all sides.
- Pour in the white wine and let it evaporate.
- Add the savoy cabbage, previously washed and cut into strips. Cover with water and season with salt and pepper.
- Cover the pot and let it simmer for about 2 hours, stirring occasionally.
- The cassoeula is ready when the meat is tender and the cabbage is cooked down. Serve hot.
