  1. In a large pot, melt the butter and add the chopped onion, carrot, and celery. Cook until the vegetables are soft.
  2. Add the pork ribs, pork rind, and sausages to the pot. Cook until the meat is browned on all sides.
  3. Pour in the white wine and let it evaporate.
  4. Add the savoy cabbage, previously washed and cut into strips. Cover with water and season with salt and pepper.
  5. Cover the pot and let it simmer for about 2 hours, stirring occasionally.
  6. The cassoeula is ready when the meat is tender and the cabbage is cooked down. Serve hot.
