Carrot Cake
This moist and flavorful carrot cake is made with grated carrots, walnuts, and a cream cheese frosting.
Ingredients - Serves 12
- Vanilla extract - 1 teaspoon
- Powdered sugar - 2 cups
- Unsalted butter - 1/2 cup, softened
- Cream cheese - 8 ounces
- Walnuts - 1 cup, chopped
- Salt - 1/2 teaspoon
- Cinnamon - 1 teaspoon
- Baking soda - 1 teaspoon
- Baking powder - 2 teaspoons
- Eggs - 4
- Vegetable oil - 1 cup
- Granulated sugar - 1 1/2 cups
- All-purpose flour - 2 cups
- Carrots - 2 cups, grated
Let's Get Started
- Preheat the oven to 350°F and grease a 9x13-inch baking pan.
- In a large mixing bowl, combine the grated carrots, flour, sugar, vegetable oil, eggs, baking powder, baking soda, cinnamon, and salt. Mix until well combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the cream cheese frosting. In a separate mixing bowl, beat the cream cheese and softened butter until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, and continue to beat until well combined.
- Once the cake has cooled, spread the cream cheese frosting evenly over the top.
- Slice and serve the carrot cake.
