Carrot and Thyme Soup
This creamy carrot and thyme soup is packed with flavor and perfect for a comforting meal.
Ingredients - Serves 6
- Fresh thyme leaves - For garnish
- Salt and pepper - To taste
- Heavy cream - 1/2 cup
- Vegetable broth - 4 cups
- Thyme - 1 teaspoon, dried
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Carrots - 1 pound, peeled and chopped
Let's Get Started
- In a large pot, heat some olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the chopped carrots and dried thyme. Cook for a few minutes until the carrots start to soften.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 15-20 minutes, or until the carrots are tender.
- Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
