Cape Malay Roti
Cape Malay roti is a type of Indian-influenced flatbread that is popular in South Africa. It's soft, flaky and perfect for scooping up curry or for making wraps.
Ingredients - Serves 8
- Vegetable oil - For frying
- Butter - 1/2 cup, melted
- Water - 1 1/2 cups
- Salt - 1 teaspoon
- All-purpose flour - 4 cups
Let's Get Started
- In a large bowl, combine the flour and salt.
- Gradually add the water, mixing until a dough forms.
- Knead the dough on a floured surface until it is smooth and elastic, about 10 minutes.
- Divide the dough into 8 equal pieces and roll each piece into a ball.
- Roll out each ball into a thin circle, brush with melted butter, then roll up into a log and coil into a spiral shape.
- Roll out each spiral into a thin circle again.
- Heat a little oil in a frying pan over medium heat and fry each roti until golden brown on both sides, about 2 minutes per side.
- Serve the roti warm, with curry or as a wrap.
