Calçots
Calçots are a type of scallion from Catalonia, Spain. They are traditionally grilled over an open flame and served with Romesco sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Red wine vinegar - 2 tablespoons
- Tomatoes - 2, peeled and seeded
- Roasted red peppers - 1 cup
- Garlic - 2 cloves
- Almonds - 1/2 cup, toasted
- Olive oil - 2 tablespoons
- Calçots - 2 dozen
Let's Get Started
- Preheat a grill to high heat.
- Brush the calçots with olive oil and grill until charred and tender, about 10 minutes.
- While the calçots are grilling, make the Romesco sauce. In a food processor, combine the almonds, garlic, roasted red peppers, tomatoes, vinegar, parsley, salt, and pepper. Process until smooth.
- Serve the grilled calçots with the Romesco sauce for dipping.
