Cajun Shrimp Po' Boy
A classic New Orleans sandwich, the Po' Boy is filled with spicy Cajun shrimp and topped with a tangy remoulade sauce.
Ingredients - Serves 4
- Remoulade sauce - 1/2 cup
- Tomato - 1, sliced
- Lettuce - 4 leaves
- French bread - 1 loaf, cut into 4 sections and split
- Vegetable oil - For frying
- Bread crumbs - 1 cup
- Egg - 1, beaten
- Flour - 1 cup
- Cajun seasoning - 2 tablespoons
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- Season the shrimp with the Cajun seasoning.
- Dredge the shrimp in the flour, then dip in the beaten egg, and coat in the bread crumbs.
- Heat the oil in a deep fryer or large pot to 375°F.
- Fry the shrimp in batches until golden brown, about 3-4 minutes.
- Drain on paper towels.
- Spread the remoulade sauce on both sides of the French bread.
- Layer the lettuce and tomato on the bottom half of the bread.
- Top with the fried shrimp and close the sandwich.
