Cabbage and Beef Stew
A hearty and comforting stew made with tender beef and fresh cabbage.
Ingredients - Serves 6
- Thyme - 1 teaspoon
- Bay leaf - 1
- Tomato paste - 2 tablespoons
- Beef broth - 4 cups
- Cabbage - 1/2 head, chopped
- Potatoes - 2, chopped
- Carrots - 2, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef stew meat - 1 pound
Let's Get Started
- Season the beef with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the carrots, potatoes, and cabbage to the pot and cook for a few minutes until the vegetables start to soften.
- Return the beef to the pot. Add the beef broth, tomato paste, bay leaf, and thyme. Stir to combine.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beef is tender and the flavors are well combined.
