Cabbage and Beef Stew

Let's Get Started

  1. Season the beef with salt and pepper.
  2. Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  3. In the same pot, add the onion and garlic and cook until softened.
  4. Add the carrots, potatoes, and cabbage to the pot and cook for a few minutes until the vegetables start to soften.
  5. Return the beef to the pot. Add the beef broth, tomato paste, bay leaf, and thyme. Stir to combine.
  6. Bring the stew to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beef is tender and the flavors are well combined.
