Bœuf À La Mode
Bœuf à la Mode is a classic French dish where beef is slowly braised with vegetables, white wine, and a bouquet garni.
Ingredients - Serves 6
- Bouquet garni - 1 (a bundle of thyme, bay leaves, and parsley)
- Beef broth - 2 cups
- White wine - 2 cups
- Garlic cloves - 3, minced
- Carrots - 3, chopped
- Onions - 2, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef chuck roast - 3 pounds
Let's Get Started
- Season the beef with salt and pepper.
- Heat the olive oil in a large Dutch oven over medium-high heat. Add the beef and brown on all sides.
- Remove the beef from the pot and set aside.
- In the same pot, add the onions, carrots, and garlic. Cook until the vegetables are softened.
- Add the wine to the pot and bring to a boil. Cook until the wine is reduced by half.
- Return the beef to the pot. Add the beef broth and bouquet garni.
- Cover the pot and reduce the heat to low. Simmer for 3 hours, or until the beef is tender.
- Remove the bouquet garni before serving.
