Let's Get Started

  1. Preheat the oven to 325°F.
  2. Season the short ribs with salt and pepper.
  3. Heat the olive oil in a large Dutch oven over medium-high heat. Add the short ribs and brown on all sides, about 10 minutes. Remove from the pot and set aside.
  4. Add the onion, carrots, and garlic to the pot and cook until softened, about 5 minutes.
  5. Add the wine, beef broth, tomato paste, rosemary, and thyme. Bring to a simmer.
  6. Return the short ribs to the pot, cover, and transfer to the oven.
  7. Braise for 2.5-3 hours, or until the meat is tender and falling off the bone.
  8. Serve the short ribs with the braising liquid and vegetables.
