Boston Cream Pie Pancakes
These fluffy pancakes are inspired by the classic Boston Cream Pie, with a delicious combination of vanilla custard and chocolate ganache.
Ingredients - Serves 4
- Chocolate ganache - 1/2 cup
- Vanilla custard - 1 cup
- Butter - 2 tablespoons, melted
- Vanilla extract - 1 teaspoon
- Milk - 1 1/4 cups
- Egg - 1
- Sugar - 2 tablespoons
- Salt - 1/2 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 1 1/2 cups
Let's Get Started
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg and then add the milk, vanilla extract, and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
- Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter.
- To assemble, spread a layer of vanilla custard on top of each pancake. Drizzle with chocolate ganache.
