Bolinhos de Arroz
Bolinhos de Arroz are delicious Brazilian rice balls made with leftover rice, cheese, and herbs. They are crispy on the outside and soft on the inside.
Ingredients - Serves 6
- Vegetable oil - For frying
- Breadcrumbs - 1 cup
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Green onions - 2, finely chopped
- Fresh parsley - 1/4 cup, chopped
- Eggs - 2
- Parmesan cheese - 1/2 cup, grated
- Cooked rice - 2 cups

- In a large bowl, combine the cooked rice, Parmesan cheese, eggs, parsley, green onions, garlic powder, salt, and black pepper. Mix well.
- Shape the mixture into small balls, about the size of a golf ball.
- Roll each ball in breadcrumbs, making sure they are evenly coated.
- Heat vegetable oil in a deep pan or skillet over medium heat.
- Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove the rice balls from the oil and place them on a paper towel-lined plate to drain excess oil.
