Bok Choy and Fried Rice
This delicious recipe combines the flavors of bok choy and fried rice for a satisfying and healthy meal.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 4, chopped
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Sesame oil - 2 tablespoons
- Soy sauce - 3 tablespoons
- Eggs - 4, beaten
- Peas - 1 cup
- Carrots - 2, diced
- Bok choy - 4 heads, chopped
- Cooked rice - 4 cups
Let's Get Started
- Heat sesame oil in a large skillet or wok over medium heat.
- Add garlic and ginger, and sauté for 1 minute until fragrant.
- Add carrots and peas, and cook for 2-3 minutes until slightly tender.
- Push the vegetables to one side of the skillet and pour beaten eggs into the other side.
- Scramble the eggs until cooked through, then mix with the vegetables.
- Add bok choy and cook for another 2-3 minutes until wilted.
- Add cooked rice, soy sauce, and green onions to the skillet.
- Stir well to combine all the ingredients and cook for an additional 2-3 minutes.
- Season with salt and pepper to taste.
