Bok Choy and Egg Fried Rice
This delicious fried rice recipe combines the flavors of bok choy, eggs, and aromatic seasonings.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Scallions - 4, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Eggs - 4
- Bok choy - 4 cups, chopped
- Cooked rice - 4 cups, chilled
Let's Get Started
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger, and sauté for 1 minute until fragrant.
- Add chopped bok choy and cook for 2-3 minutes until wilted.
- Push the bok choy to one side of the skillet and crack the eggs into the other side.
- Scramble the eggs until cooked through, then mix them with the bok choy.
- Add chilled cooked rice to the skillet and stir-fry for 3-4 minutes until heated through.
- Drizzle soy sauce and sesame oil over the rice, and season with salt and pepper to taste.
- Stir-fry for another 2 minutes to combine all the flavors.
- Remove from heat and garnish with chopped scallions.
