Bok Choy and Egg Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and grated ginger, and sauté for 1 minute until fragrant.
  3. Add chopped bok choy and cook for 2-3 minutes until wilted.
  4. Push the bok choy to one side of the skillet and crack the eggs into the other side.
  5. Scramble the eggs until cooked through, then mix them with the bok choy.
  6. Add chilled cooked rice to the skillet and stir-fry for 3-4 minutes until heated through.
  7. Drizzle soy sauce and sesame oil over the rice, and season with salt and pepper to taste.
  8. Stir-fry for another 2 minutes to combine all the flavors.
  9. Remove from heat and garnish with chopped scallions.
  10. Serve hot and enjoy!
