Blackberry Pancakes
Delicious and fluffy pancakes filled with fresh blackberries.
Ingredients - Serves 4
- Maple syrup - For serving
- Butter - For cooking
- Fresh blackberries - 1 cup
- Vanilla extract - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Milk - 1 cup
- Egg - 1
- Sugar - 2 tablespoons
- Salt - 1/2 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 1 1/2 cups
Let's Get Started
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg. Add the milk, vegetable oil, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the fresh blackberries.
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter to coat the surface.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
- Repeat with the remaining batter.
- Serve the blackberry pancakes warm with maple syrup.
