- Powdered sugar - 2 cups
- Cocoa powder - 2 tablespoons
- Milk - 1/2 cup
- Vanilla extract - 1 teaspoon
- Egg - 1
- Granulated sugar - 1 cup
- Unsalted butter - 1/2 cup, softened
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
- Divide the dough in half. In one half, mix in the cocoa powder until well incorporated.
- Drop spoonfuls of the vanilla and chocolate dough onto the prepared baking sheet, alternating between the two.
- Bake for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar and hot water until smooth.
- Spread half of each cookie with the vanilla icing and the other half with the chocolate icing.
- Allow the icing to set before serving.
