Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, mix the flour and salt. Gradually add water to the bowl, mixing with your hands until a dough forms. If the dough is too dry, add more water, a tablespoon at a time, until it comes together.
  2. Knead the dough for about 10 minutes, or until it is smooth and elastic. Cover the dough with a damp cloth and let it rest for an hour.
  3. Divide the dough into 8 equal pieces. Roll each piece into a long, thin strip, then stretch the strip into a noodle. The noodle should be about 1 inch wide and 3 feet long.
  4. Bring a large pot of water to a boil. Add the noodles, one at a time, and cook for about 2 minutes, or until they float to the top. Remove the noodles with a slotted spoon and drain.
  5. In a large bowl, mix the vegetable oil, minced garlic, chopped green onions, soy sauce, vinegar, and chili oil. Add the cooked noodles and toss to coat.
  6. Serve the noodles hot, with additional chili oil on the side if desired.
