Biángbiáng Noodles
Biang Biang noodles, also known as belt noodles, are a type of noodle popular in the cuisine of China's Shaanxi Province. The noodles, touted as one of the "eight strange wonders of Shaanxi", are described as being like a belt, owing to their thickness and length.
Ingredients - Serves 4
- Chili oil - 1 tablespoon
- Chinese black vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- Salt - 1 teaspoon
- Water - 200 ml
- All-purpose flour - 500 grams
Let's Get Started
- In a large bowl, mix the flour and salt. Gradually add water to the bowl, mixing with your hands until a dough forms. If the dough is too dry, add more water, a tablespoon at a time, until it comes together.
- Knead the dough for about 10 minutes, or until it is smooth and elastic. Cover the dough with a damp cloth and let it rest for an hour.
- Divide the dough into 8 equal pieces. Roll each piece into a long, thin strip, then stretch the strip into a noodle. The noodle should be about 1 inch wide and 3 feet long.
- Bring a large pot of water to a boil. Add the noodles, one at a time, and cook for about 2 minutes, or until they float to the top. Remove the noodles with a slotted spoon and drain.
- In a large bowl, mix the vegetable oil, minced garlic, chopped green onions, soy sauce, vinegar, and chili oil. Add the cooked noodles and toss to coat.
- Serve the noodles hot, with additional chili oil on the side if desired.
