Bitter Leaf Soup
Bitter leaf soup is a traditional Nigerian dish made with bitter leaf vegetables, assorted meats, and flavorful spices.
Ingredients - Serves 6
- Uziza leaves - 1 handful, chopped (optional)
- Salt - To taste
- Seasoning cubes - 2
- Pepper - 2-3 scotch bonnet peppers, blended
- Dry fish - 2 medium-sized, cleaned
- Stockfish - 100g, soaked and deboned
- Crayfish - 2 tablespoons, ground
- Onion - 1 medium-sized, chopped
- Palm oil - 1/2 cup
- Assorted meats - 500g, cut into bite-sized pieces
- Bitter leaf - 2 cups, washed and squeezed
Let's Get Started
- In a large pot, boil the assorted meats with chopped onions, seasoning cubes, and salt until tender.
- Add the stockfish and dry fish to the pot and continue boiling for another 10 minutes.
- Heat the palm oil in a separate pot and add the chopped onions. Sauté until the onions are translucent.
- Add the blended pepper and crayfish to the pot and cook for 5 minutes.
- Add the boiled meats, stockfish, and dry fish to the pot with the palm oil mixture. Stir well.
- Add the bitter leaf and uziza leaves (if using) to the pot. Stir and simmer for 15 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot with your choice of swallow (e.g., pounded yam, eba, or fufu).
