Ingredients - Serves 6

Let's Get Started

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. Heat ghee in a large pot over medium heat. Add the bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.
  3. Add the sliced onions and cook until golden brown.
  4. Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
  5. Add the chicken pieces and cook until they are browned on all sides.
  6. Add the chopped tomatoes and cook until they are soft and mushy.
  7. Add the yogurt, biryani masala, turmeric powder, red chili powder, garam masala, and salt. Mix well to coat the chicken with the spices.
  8. Add the soaked basmati rice and gently mix it with the chicken and spices.
  9. Pour enough water to cover the rice and chicken. Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice is cooked and the chicken is tender.
  10. Once the rice is cooked, drizzle the saffron milk over the top and gently mix it with the rice.
  11. Garnish with coriander leaves and mint leaves.
  12. Serve hot and enjoy the flavorful Chicken Biryani!
