Bibingka
Bibingka is a traditional Filipino rice cake made with rice flour and coconut milk. It is often enjoyed during Christmas season.
Ingredients - Serves 6
- Banana leaves - 6 pieces
- Salted eggs - 2, sliced
- Grated cheese - 1/2 cup
- Butter - 2 tablespoons, melted
- Salt - 1/2 teaspoon
- Baking powder - 1 tablespoon
- Eggs - 3
- Sugar - 1 cup
- Coconut milk - 1 1/2 cups
- Rice flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C).
- Line the bottom of a baking dish with banana leaves.
- In a mixing bowl, combine rice flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together coconut milk, eggs, and melted butter.
- Gradually pour the wet ingredients into the dry ingredients and mix until well combined.
- Pour the batter into the prepared baking dish.
- Top the batter with grated cheese and sliced salted eggs.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool for a few minutes.
- Serve warm and enjoy!
